What better way to start your day, than with a healthy muffin. Here is two of my favourite muffins.
Muffins is an excellent freezer food, and you can just take them out the night before.

Chocolate choc chip muffin
Ingredients:
2 cups all purpose flour
1 cup sugar
1/2 cup cacoa
1 tsp baking soda
1/2 tsp salt
1 cup choc chips
2 eggs
3/4 cup sour cream or greek joghurt
1/2 cup oil
1/2 cup milk
1 tsp vanilla
Method:
Mix dry ingredients together.
Mix wet ingredients together.
Combine two mixtures, do not over mix, just mix till you do not see any flour anymore.
Fill muffin hole only half.
Bake at 160 degrees C for about 15-20 min.
Let it cool on a cooling rack.
Banana almond muffins
Ingredients:
1 3/4 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup butter, softened
3/4 cup brown sugar
2 large eggs
4 bananas mashed
1/2 cup chopped, almonds
1/2 cup greek joghurt
1 tsp vanilla
1/4 cup milk
Method:
Cream the butter and sugar.
Add the eggs one by one, mix well.
Add the joghurt, milk, vanilla to the butter mixture.
Add 4 smashed bananas and almonds to the mixture.
Lastly add the dry ingredients and mix just till
combined.
Sprinkle cinnamon sugar on top of the muffins
and bake at 160 degrees C for 15-20min.
